For many the thought of cooking on a BBQ just spells a disaster waiting to happen, but with Fuerteventura’s sunny climate it is a popular way to cook and dine. Try the recipe below if you are a novice to the “Old Barbie” and you’ll be surprised at how easy it is to produce a great meal and Wow the guests.
BBQ Beef Back Ribs
Ribs are always a popular BBQ Dish and the following recipe is simple. Serves 4-6 persons.
Ingredients
• 3 Beef Back Racks (whole)
• Pepper
• 2 tbsp Tomato Ketchup
• 1 tbsp Worcestershire Sauce
• 2 tbsp Molasses, Honey or Golden Syrup
• 1 tsp Tabasco
• Marinade
• 3 tbsp Lemon Juice
• 3 tbsp Olive Oil
½ tsp Chilli Powder
• 3 tsp salt
• Take the ribs and cut down between the bones, but not all the way through.
• Rub the salt all over the racks.
• Combine the garlic, lemon juice, oil and chilli and brush the mixture over the racks. Cover with foil and leave to marinade in the fridge for one hour.
Now prepare the BBQ glaze by combining the rest of the ingredients and Set aside.
• Before you cook the racks, allow them to come to room temperature.
• Barbecue the racks on a gas or charcoal grill over a medium heat for approx. 60-90 minutes.
• During the last 15-20 minutes, regularly brush the glaze onto the ribs. Once cooked, remove from the grill and cover with foil. Leave in a warm place to rest for 10-15 minutes before serving.
• Serve with baked potatoes and sour cream
