Cook Recipes for Crisis Times | Sopa Castellana

CASTILIAN SOUP
(Cost 2,50€, serves 4)
Ingredients:
4 spoon of Olive Oil
150 grs. of Bread (previous day better)
1 Large Onion
4 Garlic cloves
1 glass of White Wine
70 grs. of ‘Chorizo’
4 Eggs
1,5 lts. of Boiling Water
1 teaspoon of Paprika
2 Desert spoons of Parsley
Salt to taste

Put half of the oil in the frying pan with the the bread slices of 2 or 3 cms. When the bread is golden put to one side.
Cut the onion in strips and peel the garlics.
Poach the onion together with the garlic and when they start to become transparent add the sausage, give a couple of stirs and add the wine.
Take off the heat and add the paprika.
Return to the heat and then add the water and put salt to taste. Reduce during 8 minutes.
In an ovenproof dish place the bread and the content of the frying pan.
Put in the oven pre warmed to 200 ºC.
When crust is formed, open the oven and add the raw eggs on top. Leave it in the oven until the eggs are cooked.
Dust with parsley and the meal is ready to serve.
